How to make shiratama dango:
Ingredients:
- 1 cup of shiratamako (glutinous rice flour)
- 1/4 cup of warm water
- Kinako (roasted soybean flour) for sprinkling (optional)
- Red bean paste (an) or mitarashi (sweet soy sauce) for serving
Instructions:
- Pour the cup of shiratamako into a large bowl.
- Gradually add the warm water to the shiratamako. Mix with a spoon or your hands until a smooth and malleable dough forms.
- Divide the dough into portions and shape small balls about the size of a walnut.
- Bring a large pot of water to a boil.
- Place the dough balls into the boiling water and cook until they float to the surface, which may take around 1-2 minutes.
- Once the balls float, cook for an additional 1-2 minutes, then remove them with a slotted spoon and place them in a bowl of cold water to stop the cooking process.
