The Organic Whole Grain Rice Koji Powder from Marukura is made from organically cultivated rice, providing an ideal base for various preparations. It facilitates the creation of shio koji, a fermented salty rice condiment, and amazake, a non-alcoholic fermented rice beverage. Additionally, it can be used directly to marinate meat, fish, and vegetables, as well as in baking.
Its composition based on whole grain rice offers higher nutrient content such as vitamin E and fiber compared to white rice. By skipping the boiling pasteurization step, it retains more active enzymes compared to other koji rice from different brands. Most surprisingly, it comes in powdered form, significantly simplifying its use compared to conventional koji rice. The amazake made with this rice koji powder has a smoother texture without rice grains and contains no additives.
This type of powdered koji rice, obtained by pulverizing dried koji rice, is notably easier to use than traditional koji rice.
